Tom and I got up early this morning to make pancakes together, only to discover that we only had 1 egg left (my fault, whoops). Luckily we had a pot of Greek yogurt in the fridge and I was able to improvise to make these deliciously filling Greek Yogurt pancakes. This recipe feeds 2 perfectly, even if one of those people is more interested in the Winter Olympics ice hockey matches…
Greek Yogurt Pancakes
150g Greek yogurt
1 medium egg
65g plain flour
1tbsp milk
Knob of butter or coconut oil, to fry
1 Whisk the yogurt, egg, flour and milk together. Heat up a large non-stick frying pan over medium heat and melt a little of the butter or coconut oil.
2 Drop large serving spoonfuls of batter in to the pan, spaced well apart (or cook in batches). Cook the pancakes for 2-3 min until the top is bubbling and the underside is golden. Flip and cook for a further 2min.
3 While you cook remaining pancakes, keep cooked pancakes warm on a baking tray or plate in the oven on low. Serve with fruit, yogurt, maple syrup, golden syrup or whatever takes your fancy!
You could also stir fruit, nuts or chocolate chips into the batter so a star studded treat.
