PANCAKE PARTY

We had a belated birthday brunch for Jess this morning. We made pancakes!!

Fluffy Pancakes

175g self-raising flour
2 tsp bicarbonate of soda
pinch of salt
2 medium eggs, beaten
175ml sour cream
300ml milk
butter to fry

Sieve the flour, bicarbonate of soda and salt into a large bowl, then whisk in the eggs, sour cream and milk to make a thick batter.

Fry a little butter in a non-stick frying pan, spread the batter into the pan to about hand size. Cook for about 3 minutes before flipping and cooking on the other side for 3 further minutes. For some of the pancakes we added blueberries to the batter. You could do this with any topping you like.

Top with berries, bananas, chocolate chips, maple syrup or whatever takes your fancy!

We also had cupcakes to celebrate Jess’s belated birthday (they were not homemade, whoops!).
