I absolutely love pancakes, whether they’re crepes, thick fluffy american pancakes, or healthified pancakes like these little beauties. They are one of my favourite pre-work breakfasts for when I’ve got a little time on my hands in the morning and don’t have to rush out of the door for a gym class or early meeting. It’s a brilliant way of using up a slightly manky banana or finishing off the last of the eggs. Plus you can adapt them with whatever ingredients you have on hand- I love serving mine with a little maple syrup and some greek yogurt, extra fruit or nuts.
2 Ingredient Pancakes
Ripe banana
1 large egg – I actually sometimes use 2 medium eggs if I have them
1 Heat a large non-stick frying pan with a little oil on low. Mash the banana really well then beat in the egg so they are full combined.
2 Mix in any other ingredients you want; vanilla essence, cinnamon, ginger, blueberries, or leave them plain. Pour mixture into the pan and leave to cook for about 5 min until it looks cooked through, then carefully flip over to cook for 2 min on the other side. It might break up at this point, don’t worry it still tastes good!
3 Serve immediately, decorated with your favourite choice of toppings!
Tips for Perfect Pancakes
I made these a number of times when I ended up with more of a scramble than a pancakes, so here are a few of my tips to get these pancakes right;
- Cook it low and slow, be patient with them- I usually do something else like make my packed lunch while they cook so I don’t turn it too early
- You want the banana to egg ratio to be in favour of the egg- use a small banana and large egg, or large banana and two eggs.
- Try not to think of it as a banana omelette, which it is but sounds gross
- Adding spices, extracts and fruit is a great way of adding flavour without a load of sugar to your pancake
- These come out quite big- depending on the size of your pan, they reheat in the microwave easily if you want to save half for the following morning.
- Make sure your pan is non-stick, you shouldn’t have a problem flipping if it is.
- Use a large fish slice (or two) for flipping, these pancakes break fairly easily.
